Converting butter by weight and by volume
Recipes describe butter in sticks, cups, spoonfuls, ounces or grams, and a package may use yet another unit. Weights and volumes can only be matched if you know how heavy the butter is for its size. This converter assumes butter weighs 959 grams per liter (0.959 g/ml). That density is what makes a standard US cup of 236.6 ml come out at about 227 g, the figure usually quoted for a cup of butter.
Internally, every amount is converted into a volume and then expressed in your chosen unit. Answers in grams and milliliters are rounded to whole numbers, apart from a few decimals when you start from milliliters or ounces. All other results show up to three decimals.
The size of a US butter stick
American butter is packed as sticks, and four of them fill a one-pound carton. Each stick weighs 4 ounces (113 grams), and the paper wrapper has tablespoon lines printed on it, so a whole stick is 8 tablespoons or half a cup.
A stick of butter in cups
By the usual kitchen rule a stick fills half a cup, so a pair of sticks fills one cup. The converter reports 0.493 cups for one stick because it uses the 240 ml legal cup found on food labels, while the half-cup rule assumes the customary cup of 236.6 ml. A stick holds about 118.3 ml (eight tablespoons of 14.79 ml), so the two answers differ only by the 1.4% gap between the two cup sizes.
A stick of butter in grams
A stick is 113.4 g (4 oz × 28.35 g), shown as 113 g. The table gives the common multiples:
| Sticks | Grams | Ounces | Tablespoons | Cups |
|---|---|---|---|---|
| 1/4 | 28 | 1 | 2 | 1/8 |
| 1/2 | 57 | 2 | 4 | 1/4 |
| 1 | 113 | 4 | 8 | 1/2 |
| 2 | 227 | 8 | 16 | 1 |
| 3 | 340 | 12 | 24 | 1 1/2 |
| 4 | 454 | 16 | 32 | 2 |
| 8 | 907 | 32 | 64 | 4 |

One cup of butter in grams
It depends on the size of the cup. A customary US cup (236.6 ml) of butter is about 227 g, the same as two sticks. The 240 ml legal cup gives 230 g, a 250 ml metric cup gives about 240 g (250 × 0.959 = 239.75), and an imperial cup of 284.1 ml gives roughly 272 g. The unit lists offer the legal cup and the imperial cup; for a customary or metric cup, enter the volume in milliliters (236.6 or 250) instead.
Quick rules of thumb for butter
- 1 stick = 8 tablespoons = 1/2 cup = 4 oz = 113 g.
- 2 sticks = 1 cup = 8 oz = 227 g.
- 4 sticks = 2 cups = 1 lb = 454 g.
- 1 tablespoon is about 14 g and 1 teaspoon is about 5 g.
- 100 g of butter is about 0.88 stick, or 7 tablespoons.
- A 250 g European block is about 2.2 sticks, or 17.6 tablespoons.
When a recipe is written in grams, weighing is more precise than scooping, because cold butter packs into a cup with air gaps.
Getting accurate results
- Pick the right cup. US legal, US customary, metric and imperial cups differ by up to 20%, so the unit you choose matters.
- Use real butter. Whipped or spreadable butter contains air or oil, so its density is not 959 g/l and the results will be off.
- Salt does not matter. Salted and unsalted butter weigh the same for conversion purposes.
